Homemade dabeli all in time for lunch. I made my own dabeli masala for this one, roasted and ground fresh. The kitchen smelled incredible. And it's pomegranate season, so you know I went heavy on those.

How to make it
- 1
Kick the potatoes off first: potatoes in a bowl, sprinkle ~2 tbsp water, lid on to trap the steam, microwave 12 minutes.
- 2
While that's going, make the masala. Roast the whole spices on low-medium until aromatic, toast the coconut, then blend everything fine with black salt, chili powder and amchur. Chop your onions and cilantro and get everything else ready.
- 3
Mash the potatoes and mix with the dabeli masala.
- 4
Toast pav with butter. Layer potato filling, tamarind chutney, green chutney, pomegranate, onions, cilantro and sev on top.
Sean's tweaks
- Green chutney frozen in ice cube trays means it is always ready. One cube per batch.
- Pomegranate season means go heavy on the arils.
Good to know
- The whole thing took under 30 minutes including the masala.
