This food adventure started with our dear friend Manjari, who generously gave us two banana leaves from her home garden. We had the pleasure of using them for lunch today, and what a lovely experience.
More so, Twinkle and I got to share one plate. It felt so much more romantic than eating off two separate plates, and practically speaking, cleanup was easy.
I learned in this process that banana leaves are wildly sustainable. They grow well in our climate, and after a quick damp towel wipe you can eat right off them. There's a natural coating that keeps them from getting soggy. Once you're done, just roll it up and throw it in the compost.
Creatively assembling your leftovers is a great way to put together lunch. It's tasty, enjoyable and fast, and that matters during the workday. A good reminder that leftovers plus a little creativity is the best workday lunch, especially shared.

How to make it
- 1
Dosa batter from scratch is so worth it, and once it's ready everything takes 10 minutes.
- 2
Spread the dosa, fill with the leftover schezwan noodles and paneer chili gravy, fold.
- 3
Everything else goes straight from the fridge, freezer or pantry onto the leaf.
Sean's tweaks
- Banana leaves need only a quick wipe with a damp towel. A natural coating keeps them from going soggy, and when you're done you roll it up and compost it.
- Green chutney frozen in ice cube trays and a batch of dosa batter in the freezer make this a ten-minute lunch any day of the week.
Good to know
- Banana leaves grow well in the Austin climate. If you don't have a friend with a garden, Indian and Asian grocers usually stock them frozen.
- This is a leftovers-assembly lunch, so swap in whatever you have. Any curry or stir-fry folds into a dosa.
